10 ways to cook with Carrots





Tried out this recipe today, I didn't have some of the ingredients especially the Ras el Hanout so i improvised and used some mixed spice instead.  Really versatile recipe that would be great with cous cous, rice or just with bread. 


2. Roast Carrot soup

Simple soap recipe, chop and roast the carrots in the oven till soft.  Then add to a pan with some vegetable stock.  Puree with a hand blender and season to taste. 


3. Baked carrot chips

Chop your carrots into wedges, toss in some veg oil along with salt and pepper.  Roast in the oven for 20 - 30 Min's at 200 Celsius.  Great alternative too plain potato chips. 


4. Carrot Cake Cookies

Another experiment of mine.  Yet again if I can think of it, some one else has probably already tried. There are a few recipes on the Internet, but I created this one based on my oat and raisin cookie recipe.  Turns out crunchy on the outside and soft on the inside.  All the great taste of carrot cake in a cookie xx




1/2 cup Dairy free Butter
1/3 cup Sugar
1 Cup Flour
3/4 Cup Rolled oats
1/2 tsp Salt
1 Cup Grated Carrots
1 tsp Cinnamon
1/3 Cup Raisins
1 tbsp Golden Syrup
1 tbsp Linseed's/flax seeds mixed with 3 tbsp of hot water (egg substitute)

Make up the flax seed egg sub and leave till the water cools

Cream the DF butter, sugar and syrup together.

Add the egg subb along with 1 tbsp of the flour and mix in. 

Add the remaining ingredients, except the raisins.  Combine together well, then fold in the raisins.

Bake in a pre-heated oven at 180 Celsius for 12-15 Min's

Allow to cool on your baking tray. 



Have a surplice of carrots at the moment, so I'm trying to use them all up.  This is my favourite carrot cake recipe, it's also popular with friends and family that don't have food intolerance's.  Planning on making this one Monday to take into the guys at the Pantry.


6. Carrot and raisin cous cous salad

Cous Cous used to be my go to meal for lunch at work. Perfect for eating at your desk with some wholemeal pitta bread.    It's easy to make, I like to make my cous cous up with veg stock and a little mixed spice.  Then grate in a carrot and add a handful of raisins. 


7. Carrot coleslaw

Grate carrot into a bowl and mix with Hellman's Fat Free Vinaigrette Dressing  and mayonnaise, to make a quick tasty coleslaw. 


8.  Carrot cake Porridge

Make your porridge as normal,  and add a grated carrot, raisins and a little cinnamon before you start to cook.  Or try the  Carrot Cake porridge recipe on The something to chew over blog.  I enjoy it, but Iv a feeling carrot cake porridge might be an acquired taste.


9.  Healthy Carrot Dogs recipe  

 From Fat free vegan  I tested this recipe last year and enjoyed it.  Great idea for a barbecue. 

I used to love soya sausages but they've been off the menu since I discovered they have yeast extract as an ingredient. Not the best thing to eat when you have a yeast intolerance. 


10. Vegetable Stir fry

One of my favourite ways to eat carrot is in a stir fry.  A vegetable peeler is really handy for shaving off thin slices of carrot. 



Carrots are one of those great veggies that can be used in both sweet and savoury meals.   Best way to cope with having a food intolerance is too make your food more interesting. 

I might be Scottish, but I don't always eat my Carrots mashed with neeps and served up with veggie haggis xx
