It's banana's....

A few days ago I was having a conversation about my favourite subject FOOD.  Randomly we ended up discussing banana's. Okay maybe not so random, Its the one fruit I always have in my fruit bowl.  Personally I'm a fully ripe banana fan, the blacker the skin the sweeter they are.  If am not eating them as a snack, I'm baking with them to make a snack mmm

Can you get addicted to a fruit?

Iv never had a problem baking with them, however it seems other people do.  So here are a few of my favourite cook book recipes, that never fail to work.

I bought this cook book a few years ago when I really got into healthy economical cooking.  I admit I loved the title, who wouldn't !.  

It's not packed with photo's, in fact there aren't any.  However it is packed with recipes

There Banana cake recipe is was one of my favourite to make.  It's easy to make dairy free, but it's not vegan.   Vegan banana cake recipes work best using oil instead of vegan butter. 


 Mary Berry 100 Cakes and bakes

My personal cooking ideal, when my brother and sister in law got married I gave them a copy of the Mary Berry Complete cook book. 


 I bought this book as I did alot of baking for Charity cake and bake sales.  It's full of great tray bake recipes, to take the stress out of the process.  My brains cognitive functions aren't always connected.  This way I don't need to get out my calculator or pencil and paper to up the quantity's in a recipe. 

My Mum loved this one so much, I had to buy her a copy.  Due to my IBS, I use this one more often when I'm baking for other people rather than myself.   There are no low fat or reduced sugar recipes in this book, lol.

I discovered this cook book in my local library.  When I had to cut both meat and poultry from my diet due to my IBS, I wanted a cook book that would give me some inspirations. 

The photo's in this book are beautifully shot, not surprising since Mary McCartney is also a photographer. 

My favourite recipe has got to be her Banana muffin This one is another favourite of my mums.  To make this one dairy free I use soya yogurt instead of soured cream. 



Food waste mission:- You don't have an excuse any more for binning your over ripe banana's.  Just bake with them instead xxxx
