Eggnog recipes - Without the egg

Eggnog - What is it??? The traditional eggnog recipe is a basic homemade custard, spiced and thickened with egg. Cinnamon, cloves and nutmeg are the main spices used, a dding alcohol is optional.  you can serve it either hot or cold depending on your preference.   Even though the recipe originated in the UK, it's more popular in the USA. The drink seems to be mentioned or featured in nearly every American Christmas movie.  Frankly I had to look it up as I had no idea what was in it. It sounds really similar in taste to a chai tea latte, one of my personal favourite hot beverages.   It's not exactly vegan friendly recipe, however I've found some great dairy free recipes that you can make instead. What Do I Eat Breakfast In winter I eat porridge and pimp it up.  My toppings change every week depending on what I'm in the mood to eat.   - Cinnamon Apple compote - Stewed Rhubarb - Spoonful of Jam - Sliced Banana - Dried fruit - Sliced pear - Honey/syrup Or you could add a teaspoon of cocoa powder to your porridge oats before cooking them, to make your own chocolate Porridge.  Forget buying those little sachets, it doesn't take long to make your own from scratch. Your also going to save yourself some money. I cook my porridge on the hob, so use a 3:1 ratio.  3 parts water too 1 part Oats. theartfulgourmet.com You don't need to be Scottish to love porridge.  Different nations around the globe all have their own versions, some made with other grains like rice.  It's the perfect breakfast for cold winters mornings.  As us Brits say "It sticks to your bones" There is one thing that really puzzles me though.  I find it hard to understand why people spend money on more expensive porridge just because it's in individual sachets.  The larger bags are more value for money, and just as easy to make.   Why buy golden syrup flavoured porridge sachets, when all you need to do is top your porridge with the real thing. Banana's for Breakie I have been really busy this week due to a surprise job interview, which kind of threw me into anxiety mode.  The only banana themed meals Iv made this week, have been for breakfast.  My favourite meal of the day.   The reason is all in the name to break  your  fast.   The first meal of the day, since you ate the day before.  So I thought Id share some of my favourite breakfast recipes. 10 ways to cook with Carrots   1.  Vegan Moroccan carrot and chickpea tagine    Tried out this recipe today, I didn't have some of the ingredients especially the Ras el Hanout so i improvised and used some mixed spice instead.  Really versatile recipe that would be great with cous cous, rice or just with bread.  2. Roast Carrot soup Simple soap recipe, chop and roast the carrots in the oven till soft.  Then add to a pan with some vegetable stock.  Puree with a hand blender and season to taste.  3. Baked carrot chips Chop your carrots into wedges, toss in some veg oil along with salt and pepper.  Roast in the oven for 20 - 30 Min's at 200 Celsius.  Great alternative too plain potato chips.  4. More Banana's....

    PLUS       = heaven   I'd rescued a batch of over ripe banana's from a friend before it went in the bin.  I really wanted to find a way to use them.  So I started my day off with some banana and peanut butter porridge, a recipe that I found on the internet.  Lets just say its an acquired taste.  Normally I love anything thats got banana and peanut butter in the recipe title, not this time.  I chopped some banana into my pot with, porridge oats, water, a pinch of salt and a shake of cinnamon. Then I cook them slowly for 20 mins. Tasted great, my mistake was in added the peanut butter on top.  All it did was mask the taste of the banana.  Even tried mixing it in which made it at least made it edible.  Won't be making that one again!!!! Spiced carrot porridge

I know I have a mental health problem, but I promise you i'm not mad!!!  My IBS is really bad at the moment and all I seem to be craving at night for my Tea is cereal because it's easy to digest. Which led me to wonder, what other ways i could serve you porridge to stop it getting boring.   Imagine a bowl of porridge that tastes just like Carrot cake mmmm.  Surprisingly it works!!!!  Who would thunk it.  I really made it out of pure curiosity but it tastes great.  Single portion Carrot spice porridge 1/2 cup porridge oats 1 cup water for thick porridge, 1 1/2 cups for a creamy porridge 1/2 tsp mixed spice 1 tsp Sugar (sweeten to taste) 1/2 a carrot grated. Handful of raisins A sprinkle of sliced almonds Add every thing except the almonds to your porridge pot, or jug if you cook in the microwave. Banana and raisin porridge Scotland hasn't had the best weather this year, for every day of glorious sun we've had a of day torrential horizontal rain.   The nights are starting to get colder, and the last thing I want in the morning is a cold breakfast.  So its Porridge time again. As a canny thrifty Scot I thought I'd pass on some of my budget cooking tips, for making a nice hot bowl of porridge.    Forgot buying Flavoured individual pre packed porridge sachet, make your own and save some money. Top tip 1:  Buy a large bag of porridge and weight out a portion. Find a storage container or cup that the amount fits into.  That way when you make your porridge in the morning you don't have to worry about using the scales because you can use the cup/container to measure a portion. Top tip 2:  Instead of using a jug to measure out your milk or water, use the same cup that you used for the porridge. I...
