What do you eat? - When your lactose intolerant

As soon as people find out I'm lactose intolerant, the first question they always ask is.... "What do you eat?!!!!" It's as though having a food intolerance is as bad as having a serious medical problem like celiac disease or diabetes.  A food allergy can be life threatening. However a food intolerance has the potential to cause a lot of pain and discomfort. Along with some embarrassing side effects, like diarrhea or excessive flatulence.  Sound like something out of a comedy film, that is until your the one that has it!!!   My answer is always quite, well thank you x I might have a limited diet, however in no way is it boring. To manage my IBS I eat little and often.  I'm lactose and yeast intolerant, I also avoid fatty/fried food, meat, poultry, and watch how much sugary food I eat.  I BS is different for everybody, if your worried consult your doctor. Waste Not, Want not - Single Vegetables

WASTE NOT,  WANT NOT LONELY HEART VEGETABLE     It's the end of the week and you look in the fridge for something to make a meal.  But all you find is a lonely single carrot or courgette, and your left thinking "What can I make with that!!!"     To reduce food waste I now do smaller shops, more often than one large monthly one.  By only buying what I need for that week I have reduced the amount of food I need to throw out.  The only problem is I usually end up with random single vegetables in my fridge.       Carrots There's a lot you can do with a single carrot, it can go with any global cuisine.  Or more often a Hybrid of more than one, depending on what I have in my store cupboard. 10 ways to cook with Carrots   1.  Vegan Moroccan carrot and chickpea tagine    Tried out this recipe today, I didn't have some of the ingredients especially the Ras el Hanout so i improvised and used some mixed spice instead.  Really versatile recipe that would be great with cous cous, rice or just with bread.  2. Roast Carrot soup Simple soap recipe, chop and roast the carrots in the oven till soft.  Then add to a pan with some vegetable stock.  Puree with a hand blender and season to taste.  3. Baked carrot chips Chop your carrots into wedges, toss in some veg oil along with salt and pepper.  Roast in the oven for 20 - 30 Min's at 200 Celsius.  Great alternative too plain potato chips.  4. Sunny roast carrot soup The sun might be shining but its freezing cold outside.  On days like these I always crave a warm bowl of soup to heat myself up.  Today's soup of the day was creamy roast carrot,  proving you don't need to add dairy to create a smooth creamy texture.  I never plan what I'm going to cook when I go shopping,  I like to check out what veg looks the best.  Morrison's had a great deal on pre-packed carrots this week, only 50p for 1 kg.  After my success last week of adding roasted mixed veg to my tomato soup, I decided to do the same with the carrots. Roasting root vegetables just intensifies the flavour, making the finished soup even tastier.   I left the skin on the carrots and chopped them into roughly even sized pieces.  Then Tossed them in a little oil with salt and pepper, before roasting in the oven for 30 Min's. Spiced carrot porridge

I know I have a mental health problem, but I promise you i'm not mad!!!  My IBS is really bad at the moment and all I seem to be craving at night for my Tea is cereal because it's easy to digest. Which led me to wonder, what other ways i could serve you porridge to stop it getting boring.   Imagine a bowl of porridge that tastes just like Carrot cake mmmm.  Surprisingly it works!!!!  Who would thunk it.  I really made it out of pure curiosity but it tastes great.  Single portion Carrot spice porridge 1/2 cup porridge oats 1 cup water for thick porridge, 1 1/2 cups for a creamy porridge 1/2 tsp mixed spice 1 tsp Sugar (sweeten to taste) 1/2 a carrot grated. Handful of raisins A sprinkle of sliced almonds Add every thing except the almonds to your porridge pot, or jug if you cook in the microwave.
