Pineapple Upside down cake

The days are growing shorter, the weather's getting colder and Christmas is getting nearer. 

It's hard enough coping with the normal stresses of the season, but it's an even more difficult time for individuals who have a mental health problem.   Iv had high and low moods swings this week, which is "normal" for me at this time of year.  However I have great friends and family who have never treated me any differently. 

One of the hardest parts of having a mental health problem is the stigma. Yet....

1 in 4 people will experience a mental health problem during this year.

Or to look at it another way.   300 people out of 1000.

Of who only 230 will visit their GP.

102  of those that do will be diagnosed as having a mental health problem. 

24 of these will be referred to specialist Psychiatric hospital. 

And 6 will become in patients in a psychiatric hospital

Today's highs.

Still loving my new cooker, road tested the top oven this morning.  Got adventurous and baked a pineapple upside down cake.  Last time I baked one was in my 2nd year of high school.  It's a lot easier than it looks.

I also made dairy free mushroom stuffed empanadas. The South American version of the cornish pasty.

Today's low's

Slept on the couch again last night.  IBS flared up last night, and the sofa is the only place I can get some sleep when that happens.  Iv found sleeping sitting up with my legs stretched out helps.  I also recomend going to bed with a hot water bottle on your tummy.  I find it relaxes the muscles enough so you can get some sleep.

My mood swings are getting more regular, Iv learnt too keep myself busy when they happen.  Which is why I ended up with my empanadas for lunch instead of tonight for my tea.  They tasted great, sometimes doing something positive helps lift the darkness.
