Sweet potato curry


Iv spent the last 2 days doing work experience at the Pantry I'm back there tomorrow, so today I planned to relax.  It's one of the anxiety management techniques I had to learn.  Bit embarrassing to admit but I had to attend relaxation classes as part of my therapy.   What can I say trying to relax is really hard work!!! 

I know Iv spent the last 2 days working in a kitchen, but one of my favourite ways to relax is cooking or baking.   Only difference is this time I can eat what I make. 

I still had some full dairy ingredients left from my christmas baking, so decided to bake scones for my mum to use them up. Once I get on a roll it's kind of hard to stop, so I made some sweet potato curry for lunch.  
It's totally dairy free, using lentils to thicken the stock.  I would have prefered to give it a bigger kick with the chilli, but my IBS isn't too good at the moment.  My stomach feels like a balloon that's been inflated too much......

If your a female and never had IBS, imagine monthly menstral pain and symptons that can last 24/7 for a few week.  If your male, imagine living with a women that is going through her monthy menstral pains!! 

Here's my recipe for sweet potato curry. 

TIP: I like using american cup measures when Im cooking, if you don't have any just use a drinking cup or mug.  It's the ratio's of each ingredient that makes the recipe work.

Sweet potato curry recipe  - Makes 4 portions

1 sweet potato - diced into cubes
1 medium potato - diced into cubes
1 cup frozen peas
1/2 cup - chopped onions
1 cup red lentils
2 cups vegetable stock
salt & pepper to taste
1 tsp Garam masala
1/2 tsp Chilli powder

- Heat some oil in a large cooking pot and soften the chopped onions over a medium heat

- Once softened add your diced potato and sweet potato, cook these for 5-6 mins before adding the spices. 

- Stir the ingredients all together, then mix your lentils in.  Finally add your stock, bring to a boil.  Then reduce and simmer for 20 min's. 

- Turn off the heat and stir in the frozen pea's and leave for 5 mins.  The remaining heat should cook the pea's. 

Due to my IBS I eat little and often, so my meals aren't large.  Which is why I had mine for lunch with just a tortilla wrap.  To make this a full meal, serve with rice. 

TIP: Placing your flatbread or tortilla wrap over your plate or pot of curry/dahl will warm it through.  Saves having to heat it in the oven.

There's nothing better than tearing off pieces of flatbread or a wrap, Then using it to scoop up your curry xxx
