Rainy day Baking - Mothers day





It's another dreek Scottish day, which gives me another good excuse to bake.  Iv already posted my Mum's mothers day card, just needed to take care of the present.  Unfortunately I won't be able to see her tomorrow, however I can still follow the spirit of the occasion by making my present.

Translation: Dreek = Dreary, cold and wet

Asked her what she would like, her reply Old Fashion Fruit Scones.  Which seems appropriate, since it was one of the first things she taught me to bake.  Mine our now safely in the freezer for the next time I see her.

Scones are one of the easiest things to bake, there also easy to make dairy free.  From one basic recipe you can make over a dozen flavours. 

Grandma's Scone Recipe

8 oz Self Raising Flour
2 oz Butter/vegan butter
1 tbsp Sugar
1/4 pint milk/dairy free milk


Pre-heat oven too 200 Celsius, look out a baking tray

- Cut the butter up small and rub into the flour till it resembles bread crumbs. 

- Stir in sugar, and make a well in the centre of the flour

- Pour in your milk and use a knife to bring the dough together, you might need more milk it depends on the weather and the type of flour you use.

- Once you half a soft dough, lift it out of the bowl onto a floured work surface.

- Pat the Scone dough, ( don't roll) till it's 1/4 inch.  The use a cookie cutter to cut out your scones.

- Use a pastry brush or your hands and put a milk wash on top

- Bake in your oven for 7 - 10 Min's, When the bottom sounds hollow when tapped there ready.

TOP TIP: Turn your Scones round half way through the cooking time.  Most ovens have a hot spot, this will ensure an even golden bake.

Fruit Scones: - Add 1 - 2 oz dried fruit in with the sugar.  If using larger dried fruit like apricots or dates, chop first.

Orange and cranberry Scones:  Add the cranberries in with the sugar, and zest of 1/2 an orange in with the milk.

Orange and chocolate chip:  Add Chocolate chips in with the sugar, and the zest of 1/2 an orange in with the milk. 

Banana and chocolate chip: Mash banana place in your liquid jug and top up too 1/4 pint with your milk.  Add the Chocolate chips in with the sugar.

Wholemeal Scones:  Use 4oz Wholemeal flour and 4 oz plain white flour.  Add 1 tsp Bicarbonate of Soda. 

You get the drift...
Other versions:

- Lemon and poppy seed

- Savoury sundried tomato and basil

- Savoury Olives and Sundried tomato


It's the same principle for making savoury scones, just leave out the sugar.
