10 ways to cook Aubergine - dairy free

Whether you call it Aubergine or Eggplant doesn't matter, it's still the same vegetable.  One you will either love or hate.  Me - I love it.

1. Roasted Aubergine Pesto

Great dairy free alternative to normal pesto.

- Place the whole aubergine into the oven at a high temp, and roast till the it turns soft. 

- Leave to cool, before cutting open and scooping out the flesh.

- Place in a food processor, and puree till smooth.  Then add salt and pepper to taste, along with 1 tbsp of veg oil.

Optional - You could also add any of the following.

Basil leaves / Chopped sun dried tomato's / Linseed's

Cook your pasta as normal, but keep a little of the water.  The starch in the water will help the pesto cling to the pasta. 

2. Aubergine Spread

Season and roast a mix of aubergine, red pepper and red onion in your oven . Leave to cool, then puree in a food processer.  Add a little veg oil and lemon juice.

Great on both Crackers and toasted pitta bread.  Iv also used it to make a dairy free pizza topping. 

3. Stir fried Aubergine

Chinese food doesn't rely on dairy as much as western food,  making it an ideal alternative.   bbc good food  has a basic recipe that you could Taylored to your own taste. 

For me stir fry veg is the ultimate quick meal, that's easy to cook.

4. Grilled Marinated Aubergine

Barbecue's aren't just for meat.  You can just as easily grill veg and fruit.  The Treehugger Internet site has  
a great article on 5 Budget eggplant recipes.  One of the recipe Iv taken a note of  is for grilled marinated aubergine.  Aubergine works great with marinades, as they soak up the flavours like little sponges. 

5. Baked Aubergine

My own recipe that came more out of necessity, than my imagination.  Bought a little too much aubergine one day and needed a recipe that would freeze well.

- Slice aubergine length ways and either roast in the oven for 20 mins or grill on your hob. 

- In a pan make a basic tomato sauce.  I used 1 can of chopped tomato with herb, and seasoned with salt and pepper. 

- Layer Aubergine in a baking a baking dish and pour over the tomato sauce, and bake in the oven for 20 -30 mins. 

- If your not intolerant to yeast you could also top with grated dairy free cheese before placing in the oven.

6. Aubergine curry- Baingan bharta eggplant curry

Indian food is one of my favourite because of the wealth of vegetarian recipes.  Try Manjulas Kitchen Eggplant Curry recipe.  If you don't have the money or the storage space to stock all of the spices, Invest in your favourite along with a good garam masala.

7. Aubergine Dip

The ultimate dairy free aubergine dip has got to be the middle eastern recipe baba Ghanoush.  If you like spicy food try the Lebanese recipe for Moutabel.

I love recipes that are already free from dairy,  making them perfect for sharing with friends. 

8. Pickled Aubergine

Pickling vegetables was originally a way to preserving them, so nothing would go to waste.  We might not need the preserving method now, but we still love the taste.

9. Creole Aubergine

Nearly every type of cusine have there own recipe for Aubergine. This is a Southern one from New Orleans . I found this Levi Roots  recipe on the bbc food internet site. 

10. Aubergine Torte

Every good meal has to finish with dessert.  I honestly didn't think Id find one, let alone a vegan version.   Heartbreak cake  is an Aubergine and chocolate Torte.
