Cake and Bake stall - Scottish Style

SCOTTISH CAKE AND BAKE
STALL CLASSICS

One of my favourite memories of my grandma was home baking.  Whenever a local church, girl guides or charity had a jumble sale she would always be there. She always had frozen some of these treats for us to eat when we went to visit her.

The cake and bake stall is always a favourite of any fundraiser.  I love how everyone involved would bake something to bring in for the stall.  Certain people would be famous for their particular bakes, so these would usually go first.  You never knew what you were going to find.  Every country has their own version, so I thought I let you into what you can find at a Scottish one.

CAKES

A must for every cake and bake sale are small cakes.  The Americans had cupcakes, we make our own smaller version.  Cupcakes seem to have taken over lately, but I love the nostalgia of our smaller cakes.  There also small enough for kids to enjoy.  Lets be honest smaller kids usually eat the buttercream off the Cupcake then drop them on the floor.

Lemon and Poppy Seed

Fairy Cake - BBC Food

Butterfly Cake Recipe  Good food uktv

In Scotland we use buttercream not double cream, to top our butterfly cakes.
If you are fundraising buttercream is better.

Queen Cakes BBC Good Food

To make these authentic Queen cakes, swap the chocolate chips for currants

Drop Scones/Scotch Pancakes

Thicker than normal pancakes.  They were always at cake and bake sales.  The recipe doesn't cost a lot to make and its always a favourite.

TRAYBAKES

Chocolate Tiffin Recipe - allrecipes

This is a no bake fridge cake recipe.  You can use any biscuit you want. It was probably created to use up broken biscuits/cookies.  It's a great recipe to make with kids.

Millionaire Shortbread Carnation

This is an easier chocolate caramel shortbread recipe.  The base is made with a crushed biscuit base.

Dairy free sweetened condensed milk recipe -  By making your own condensed milk recipe you can make your own dairy free/vegan Millionaire shortbread recipe.

TRADITIONAL CLASSICS

Jam Tarts Baking Mad

My mum used to let us make these with leftover pastry.

Little jam tarts

Little Jam Tarts BBC Good Food

You could always use pre-bought pastry and follow the good food recipe.

Raspberry Thumbprints Mumsnet

When I was little my mum would make these for our afternoon  snack, when  we got back from primary school.  It's funny the things you remember.

Scones Scottish Recipes

A British Classic, the scone is basically a quick bread.  That can either be made sweet or savoury.  They are also really easy to make.  If you plan to take them to a cake and bake sale.  Take some jam, butter or dairy free spread, you'll sell more that way.  People love eating on the go.

Rock Cake Recipe the spruce

So named because they look like rocks.  Of course if over baked they can become rock like.  This is a really old fashion British recipe.  You won't find these in the shops.  I have fond memories of these tasty treats x

Chocolate Crispy cakes  Sharabelle bakes

Scottish Coconut Macaroon bar Scottish Daily Record

This is one sweetie recipe that's totally gluten free and vegan.  The secret to this recipe is mashed potato.  You can buy them in shops but there usually make with condensed milk instead.  Homemade is always best.

Gluten free Coco snowballs   Nestle

Truffles or small sweets are often found at cake and bake stalls.  This is a brilliant gluten free and vegan recipe.

Dairy Free tablet Recipe Sharabelle bakes

Tablet is a Scottish Sweet, you can buy it in shops but it's not as prized as being able to get homemade.  It's a must for any bake sale.

GLUTEN FREE

Genius Gluten Free pastry - Asda stock both Genius shortcrust pastry and puff pastry.

Nestle Gluten Free Cereal - Most main supermarkets have there own brand gluten free cereal.  Since I'm only Gluten intolerant I'm okay using normal Rice Crispy and Cornflakes since they are accidently gluten free.

Modern cakes like cupcakes topped with swirls of frosting, are the most popular today, however we must not forget these classics.  They taste great and are just as easy to bake.  Even better they are great fun to make with kids.
