Top 5 Basic Baked Recipes

These are road tested dairy free and vegan baked recipes. I'm lactose intolerant so I know the importance of a good recipe that can easily be adapted.
What I've discovered is that there are 5 main base recipes that I use the most. Adjusting the ingredients and flavours to fit the season or occasion. Or what ever food I'm craving that day x
1. Quick Bread
Basic Soda Bread Recipe
8 oz Self Raising Flour
1 tsp Bicarbonate of Soda
200 ml Dairy free milk
1 tsp Apple Cider Vinegar
Pinch of Salt
Pre-heat your oven to 230 Celsius
Measure and dry ingredients, flour, bicarbonate of soda and salt into a bowl. Whisk to mix in the ingredients.
Make a well in the centre and pour in 200 ml milk & vinegar
Use a knife to bring the dough together. If you still have some flour at the bottom of the bowl, add a little more dairy free milk. Use your hands to knead the dough in the bowl to bring it all together.
Roll out onto a floured work surface. If your dough is really sticky sprinkle more flour over the top. Press out your dough to an 1 inch high circle.
You can score it at this point into four or 8 just like a pizza. Slide onto a baking tray, turn down oven and bake at 200 Celsius for 30 -45 Min's. (Time Depends on your oven)
Testing: Soda bread should be light brown on top. Also if you pick it up and tap the base, it should sound hollow.
Cool on a wire rack.
There are 2 ways to customise your main soda bread recipe.
1. Add a sweet or savoury ingredient to the dough.
2. Puree your veg or fruit and use as part of the wet ingredient component.
Savoury Alternatives:
- Sweet potato Soda bread scone recipe
- Chatsworth House, Beetroot soda bread
- Oat Soda Bread: Swap 2 oz of Flour for Rolled oats
- Sun dried Tomato soda bread: Add diced sun dried tomato to the batter.
Other options: fresh herbs, roasted red pepper or olives
Sweet Alternatives: Add 1 tablespoon Caster Sugar
-Fruit soda Scone: Add 2 oz Dried Fruit
- Chocolate orange soda Scone: Add Orange Zest and chocolate chips. ( amazing served warm when the chocolate slightly melts)
- Banana Soda Scone: Add a mashed banana to a jug and top up with dairy free milk too

2. Cookie/ Biscuit
Grandmas Shortbread Cookie Recipe
4 oz Dairy Free Butter/spread
2 - 4 oz Caster Sugar
8 oz Self Raising Flour
1 tsp Baking Powder
(Non Dairy milk to mix if required)
Pre-heat oven too 180 Celsius, and oil a baking tray.
Measure out dairy free spread and caster sugar into a bowl. Use a hand mixer or go old school with a wooden spoon to cream the ingredients together.
Slowly add the flour and baking powder, makes it easier to incorporate and stops flour flying everywhere.
Bring your dough together by hand, it should be firm. Chill in your fridge for 30 Min's, or overnight if your planning ahead.
First way: Break off walnut sized pieces of dough and roll into a ball. Flatten down onto your baking tray. Leave at least an inch between each cookie, as the dough will spread.
Second Way: Roll out your dough onto a well floured work surface. Lightly flour your cookie cutter and use to cut dough. Use a pallet knife to gently move the cut dough onto your oiled baking tray.
Kneed dough together and keep cutting out cookies. The little bit of dough left roll into a ball, and press onto baking tray. The ugly end one is always the cooks treat.
Bake in oven for 12 - 15 Min's, until golden brown. Most ovens have a hot spot, so half way through baking time turn the baking tray in the oven to ensure an even bake.
Testing: Make sure your biscuits/cookies are an even golden brown in colour.
Alternatives
- Oatmeal raisin cookies: Swap 2 oz Flour for rolled oats & add 2 oz raisins.
- Coconut Cookie: Swap 2 oz Flour for Desiccated coconut
- Lemon poppy seed cookies: Add zest from 1 lemon and 1 oz of Poppy seeds
- Fruit & nut: Add a mix of your favourite dried fruit and nuts to the cookie batter
- Chocolate Shortbread Cookie: Use 7 oz Flour along with 1 oz Cocoa powder
- Chocolate chip: Add as much chocolate chips as your want to the cookie dough. For kids the more the better.
- Banana chocolate chip: Add one small mashed banana to make a drop cookie dough. Fold in chocolate chips
- Peanut butter cookie: Reduce the vegan butter too 2 oz and add 2 oz of peanut butter.
3. Cake Recipe
Wacky cake Recipe
(If you don't have American Cup Measures, use a tea cup. Baking is about using the correct ratio of ingredients. Both ways will work)
1 1/2 Cups Flour
1/2 Cup Caster Sugar
1 tsp Bicarbonate of Soda
1/2 tsp Salt
1 tbsp Apple Cider Vinegar
1/4 Cup vegetable oil
1 cup cold water
- Pre-heat oven too 180 Celsius 04 160 Celsius for fan assisted ovens
- Line or grease your cake or muffin tins
- Into a bowl, measure out your flour, caster sugar, bicarbonate of soda and salt.
- In a jug mix your apple cider vinegar, vegetable oil and cold water together
- Make a well in the middle of your flour mix and pour your wet ingredients in. Whisk together to combine well. Then pour into your cake pans.
Baking time:
Whole cake 25 - 30 Min's
Cupcakes 15 - 18 Min's
- Once baked move to wire cooling rack.
Test: Do not peek by opening your oven before the end of cooking time. As cake may collapse since it's made without dairy or eggs. As with normal cakes, when gently touched on top the sponge should spring back.

Lemon or Orange Soda Cake: Use bottled soda water & the zest of one lemon/Orange.
Lemon poppy seed Cupcakes: Same as above, plus 2 oz poppy seeds
4. Muffin Recipe
Any Berry Muffin recipe
2 Cups Flour
1/2 Cup Caster Sugar
1 tsp baking powder
1/2 tsp Salt
1/2 Cup Dairy free milk
1/2 Cup Dairy free Yogurt
1/2 Cup Vegetable oil
2 Cups - Berries - (Fresh or frozen both work)
- Pre-heat Oven to 190 Celsius. Prep a muffin tin with liners or grease with veg oil
- In a large Bowl combine flour, sugar, baking powder and salt.
- In a jug mix together the yogurt, milk and vegetable oil.
- Make a well in the centre of your flour and pour in your wet ingredients. Combine by hand to make a smooth batter.
- Scoop into your muffin pans and bake, for 25 - 35 Min's
- Once baked leave to cool in the baking pan for 5 - 10 Min's, before moving onto a wire rack.
Test: Should have an even colour. Use a cocktail stick or skewer to test if the muffins are baked all the way through. Gently prick into the centre of the muffin, if the stick comes out with cake batter it needs a little longer in the oven.
Alternatives:
- Double Chocolate Muffin recipe: Swap 1/4 cup of Flour for 1/4 Cup cocoa powder, and add 1/2 Cup Dairy free Chocolate chips
- Banana muffin recipe: Change the quantity's in the muffin recipe too 1/4 cup Vegetable oil, 1/2 cup Soya milk & 1/2 Cup Soya Yogurt for 2 large banana mashed.
Banana & blueberry Muffin: Add 1 cup fresh blueberries too the banana muffin cake batter.
Banana & Rhubarb Muffin: Add 1 cup Diced fresh rhubarb to the banana muffin cake batter.
5. Fruit Loaf Cake
Tea Loaf
100 g - 200 g Dried Fruit
2 - 4 oz Caster Sugar
1/2 Pint hot tea
250 g Flour
1 tsp Baking Powder
2 tsp Mixed Spice
- In a jug soak the fruit and sugar in the tea overnight.
- Pre-heat oven too 180 Celsius, and grease or line a loaf tin
- Measure out your flour, baking powder and mixed spice into a bowl. Then pour in your wet fruit mixture.
- Mix together well and scoop into your loaf tin. Bake for 50 Min's - 1 hr. Once cooked Leave in the tin for 10 Min's before moving to a wire cooling rack.
Test: Should spring back when lightly touched in the middle. Double check with a toothpick or skewer.
Alternative idea's
- Coffee loaf cake: Use 1/2 pint of coffee instead of tea
- Orange loaf cake: Use 1/2 pint of orange juice and the zest of 1 orange.
- Chia Tea loaf cake: Use chia tea to soak the fruit or your own favourite tea brand.
