10 ways to cook sweet corn - Dairy free

What ever you call it, it's one of the most versatile vegetables on the planet, because it can be made into so many different food products.

I made baked corn fritters on Friday for dinner, which were delicious. I'd originally planned to use my own photo's in the blog, however my Internet keeps on crashing when I try and upload them from my computer.  Bleep Bleep annoying. 

 
1. Food Products made from Corn
 
My all time favourite food is made from corn, Good old fashion popcorn.  When I had my metal double rail track brace fitted over 5 years ago, I had to give it up.  Giving up fizzy drinks was easier, even with the caffeine withdraw headaches.  Going to the cinema was never the same.....

- Corn Flour / Corn starch


- Polenta or Grits a porridge made from ground corn

This finely or course ground corn is also used to make Corn Bread & Corn pudding

- Corn Tortilla's - made from Masa flour

I make my own healthy tortilla chips by baking them in the oven.  Take a corn or wheat tortilla, cut with a knife like a pizza into 8 sections.  Place on a baking sheet and cook in a pre-heated oven at 180 crisp and light brown.  Usually takes 10 - 15 Min's, depending on your oven. 



2. Preserved Corn

Preserved fruit and vegetables is a perfect way of enjoying your favourite seasonal foods, all year round.

To make a small portion try Sweet corn pickle with chilli, lime & soy sauce

Keep your cobs of corn once the kernels are chopped off.  You can use them to make vegetable stock or Corn cob Jelly



3. Corn Soup

Soup is the ultimate comfort food.  Perfect for eating on winter days or when your feeling ill or run down.  The yellow colour of corn soup can brighten up any day.  With a little corn starch/flour magic you can easily make a creamy dairy free version.

- Triple Corn soup - If your yeast intolerant like me, just leave out the nutritional yeast



4. Fried Corn

Fried corn recipes, don't always mean deep fried.  I'm not a health nut, okay I am a bit....  Due to my IBS all deep fried food is off the menu.  The heartburn and abdominal pain just isn't worth it.

If your vegetarian you could some fried corn kernels before adding to some scrambled eggs or an omelet. 



5. Creamed Corn

Iv never eaten or heard off Creamed corn until a few years ago.   Bizarrely while watching an episode of Nigella Lawson cooking show.  She used tins of creamed corn in a recipe, not something I can buy locally in Scotland.

 6. Grilled Corn

Barbecues are not just for meat or fish eaters, you can grill vegetables just as easily.  If your wondered about offending family or friends that Iv invited you to one.  Just bring your own veg and cook in some tinfoil to keep separate from the more meaty grilled food.

7. Baked Corn Goodies

Cornbread is one of those iconic American recipes and there are lots of dairy free and vegan recipes.  Iv made Corn bread muffins in the past, however I'm not really a fan of the sweet taste.

For me this  Savoury Corn bread recipe looks perfect, combining cornmeal with fresh corn kernels and chili peppers.

8. Oven Cooked Corn


If it starts to rain or you don't have a barbecue  you can still enjoy Grilled corn, by roasting it in your oven instead.

Indian Sweet Corn Curry It's a Vegetarian recipe that can be swapping out the cream for a dairy free alternative.

10. Dessert

Every meal needs to finish with dessert.  Honestly didn't think Id find any dessert recipes using corn.  However as always If I can think it, some one on the world wide web has already made it.

Iv been a fan of traditional bread cooking, since I first made it in Home Economics class my first year in high school.  Being yeast and lactose intolerant mean's Iv not been able to eat it for a while.  After working on this blog I had a Eureka moment, why couldn't I make it using Corn Bread instead. 

Bread pudding normally sets in the oven due an Egg based custard.  However I wanted to make a vegan custard recipe.   Vanilla pudding would work great as an alternative.  The corn flour should help the baked custard to set.

If you can't get any fresh corn, check out the freezer section of your supermarket.  There now stocking frozen corn kernels.  When defrosted they taste just as good as the fresh, and way better than the canned.
