10 Ways to cook Beetroot -Dairy free

Since I eat a vegetable based diet due to my IBS, it's lucky that I love veggies. However there are only so many ways I can eat them, before I get bored. Which is why I like to search out and try new recipes.
1. Soup and Salad
Velvety Beetroot & potato soup
Easy soup to make. I diced vac pack beetroot & a medium potato, then I covered them in veg stock. Once cooked through, I blitzed them with my hand blender. The potato gives the soup it's creaminess without the need for dairy.

2. Preserves
It wasn't that long ago that the only beetroot you would find in the shops was preserved. Unless you were lucky enough to grow your own.

3. Juice
There seems to be a trend for drinking vegetable juices. Not something I'm keen on trying, but that's because I prefer to eat my food. Mostly due to jaw surgery, where I had to drink all my food through a straw for 2 weeks.

One of the few vegetables you can eat at the same time as both a chip and a dip.

To make these Savoury pancakes, I swapped pureed beetroot for the dairy free milk in the recipe. If your looking for an vegan version, substitute a flax seed egg for a real one.

Vegetable casseroles sound boring but don't really need to be, if you get creative.

7. Baked
Natural red velvet Cup Cakes
Iv been looking for a vegan red velvet cupcake that doesn't have any artificial colouring added. I finally found one on The sweetest vegan that uses puree beetroot to give the cake it's reddish hue.
It was a really easy recipe to follow. Beetroot is one of the few vegetables you can't buy in a can/tin in the UK. However vac pac skinned beetroot is easy to find in most supermarkets, usually in the fruit and veg section. Weight out what you need and chop them. I used my hand blender to puree them.

You don't really taste the beetroot, however it gives the Brownies a lovely fudgy texture. I didn't tell anyone the special ingredient till after they ate it. The must have liked it as they all came back for more.
Beetroot soda bread - I love soda bread so was happy to find this recipe from Chatworth House. The recipe calls for an egg, but like a scone recipe you do not really need to add one. You might need a little more Dairy free milk to form the dough though.

Beetroot is a sweet vegetable. It's not only great for cakes and bakes but desserts as well. For a tasty dessert, try serving the vegan beetroot brownie warm with some dairy free yogurt and berries.
