Kitchen re-furb and caramel sauce recipe testing

Been a bit busy the last few days, so haven't been able to blog.   I discovered on Sunday that my Brothers planned to start my kitchen re-furb on Tuesday night.  Was slightly surprised and kind of panicked.

The plan is to take down the old pantry wall and make the kitchen larger.  I've put off decorating this room since I moved in over 13 years ago.  I just couldn't handle the thought of the noise and disruption involved, however I'm finally biting the bullet.  

Iv CBT (Cognitive behaviour Technique) the problem.  I'm okay getting work done in the house as long as am not there when it actually happens.  Iv had to accept that there are some anxiety triggers that will always be there.  The only solution is to work round them.  

Lucky for me my brothers stepped in to help.  So while they did the first stage last night, I went to my local library book club.    Then got a call from them saying they were done.   Got a shock when I got home, not only had the started the re-furb but they cleaned up after and washed the floors.  Best brothers ever...

After I got the rest of the kitchen back together this morning,  I was still kind of hyper.  So decided to do some recipe testing.  Sugar is one of my IBS triggers so I'm always looking for recipes that use fruit as a natural sweetener.

Found this great recipe Fat free date caramel sauce which is also dairy free.  The sweetness comes from the dried dates and the creamy sauce from coconut milk.  Since I didn't have any coconut milk i substituted Soya milk instead.

I've made date syrup before so Iv learnt it's best to cook or soak before you puree them.  It just creates a better texture.  I cheated a little and also added a little corn flour to stop the mix curdling, it also helps with the creamy texture.   You don't really need to add the vanilla extract, it does need a little salt to stop it becoming over sweet.   

Verdict:  Great and easy recipe that works great both warm or cold as a caramel sauce.  Major plus is that it also counts towards 1 of your 5 a day fruit or veg,  as well as being high in fibre xxx
