Thank Bananas It's NOT Friday

Bananas about bananas Okay quick Re-cap - I gave myself the task of making as many recipes as possible using my favourite fruit the Banana.  Ohh and they had to be dairy free, since I am lactose Intolerant. Rocking Rocky Road - Dairy free

Ever had the idea for a recipe stuck in your head, but can't remember where it came from.  I spent over an hour yesterday, searching the Internet for a similar recipe that I could adapt.  Only to eventually find the recipe I was looking for in one of my own cookbooks.  I got the cookbook a few years ago from a friend for Christmas.  She got it for me because it had a section on "Free From" and healthy cookies.   The recipe I was looking for    - Rocky road Wedges "Free from Gluten and wheat, these crumbly wedges contain homemade popcorn in place of broken cookies, which are the classic ingredient in no-bake cookies such as this" I went one further and made the recipe dairy free by using vegan chocolate.   Why no marshmallows?  - I don't use marshmallows as they are made with Bovine or pig derived gelatin, so there not vegetarian friendly.  Iv also yet to find a great free from friendly brand.  Firs...

Kitchen re-furb and caramel sauce recipe testing

Been a bit busy the last few days, so haven't been able to blog.   I discovered on Sunday that my Brothers planned to start my kitchen re-furb on Tuesday night.  Was slightly surprised and kind of panicked. The plan is to take down the old pantry wall and make the kitchen larger.  I've put off decorating this room since I moved in over 13 years ago.  I just couldn't handle the thought of the noise and disruption involved, however I'm finally biting the bullet.   Iv CBT (Cognitive behaviour Technique) the problem.  I'm okay getting work done in the house as long as am not there when it actually happens.  Iv had to accept that there are some anxiety triggers that will always be there.  The only solution is to work round them.   Lucky for me my brothers stepped in to help.  So while they did the first stage last night, I went to my local library book club.    Then got a call from them saying they were done.   Got a...

 Easy date truffles Why is sugar an IBS trigger? One theory is that your intolerant to certain types of sugars that are added to processed food. While another is that the sugar causes the good bacteria in your digestive system to fermentate.  Trying to be polite as possible whatever the reason the result is the same - Windy pops or Gas.   Lets face it there's only one way it can escape...........  It wasn't till I developed IBS that I discovered that it can travel both up and down the digestive system.  IBS makes your digestive system hyper senstitive, so you can actually feel it happening.  Just because I have to watch how much sweet food I eat, doesn't mean that I have to totally cut sugar out of my diet.  It just means I need to be more creative.  I often use dried fruit in my baking to give it more sweetness, so why not go one step further.
