MY SHOPPING LIST - IBS




The way I eat has changed since being diagnosed with fibromyalgia.  I just don't have the energy to cook the same way that I used too.  I would make all my meals from scratch and cook one freeze one for another day.  

My blog should really be changed too Sharabelle doesn't bake anymore.  Due to the chronic fatigue I've had to adapt my cooking habits, sometimes I get to the point when I don't want to eat.  My hands also occasionally shake, making chopping vegetables a nightmare.  

Adapt

So I've changed the type of food I buy and how I shop.  I buy frozen vegetables instead of fresh.  I still like to shop around for the best prices.  I also now shop every few days, instead of doing one large shop.  It's easier for me to carry, and gets me out every day for a short walk.  Which is great for both my mental and physical health.

Meals with eggs

Eggs for me are the ultimate fast food, forget pre-packed ready meals. Eggs are just as quick to cook.  I love them, another benefit is that they are also a great meal when you are having an IBS flare up.  


- Boiled eggs and oatcakes
- Scrambled eggs and gluten free toast
- Dry fried egg and potato waffles, which are accidentally gluten free
- Poached egg and gluten free muffins



Eggs and pasta

One of my favourite quick meals. I found this recipe years ago in an old cook book.  All you need is pasta, egg and salt and pepper.  If you want to be fancy add in some chopped chives.  

- Boil a cup of dry pasta on the hob as per pack instructions
- Beat 1 egg in a bowl with salt and pepper, while the pasta's cooking
- Drain the pasta and return to the pan off the heat
- Lower the heat on the hob
- Pour the egg over the pasta and stir together.  Then put back on the hob
- The heat of the pasta should cook the egg 
- When it looks like the eggs scrambled take of the heat and serve


Remember to shop around for the best deals.

I buy a box of 12 free range, as it works out cheaper than buying them in a 6 pack.

My best deal at the moment is my John West Tuna chunks.  Pound stretcher has the cheapest deal compared to the majority of supermarkets.

Pound stretchers stores are like an Aladdin's cave, your never know what your going to find.  Which is probably why I love them xx
