Banoffee Oat Tray brake
It's friday again and time for another recipe, as part of my Banana Project.
Oat bars or traybakes, are a wonderful cross between a scone and a cake.
Soaking the oats before hand makes the traybake lovely and moist.
While the crumble topping brings a crunchy texture to contrast.
This is my healthier version of a banoffee cake, using homemade date syrup
instead of the toffee sauce.
One of my more successful baking experiments.
Even better it contains 3 of my favourite foods
- Oats, Dates & Bananas.
Perfect with a cup of herbal tea xxx
Sharabelles Banoffee Traybake
Pre-heat Oven to 180 Celsius (160 Celsius Fan assisted)
Grease and line an 8 inch Square Baking tin.
Date Syrup
1 Cup Dates - chopped
1/2 Cup fresh boiled water
- Pour hot water over dates and cover with a clean towel. Leave overnight to soften, then blitz too a thick puree using a hand blender.
Oat Base
1/2 Cup Caster Sugar
1/3 Cup Vegetable oil
1 Cup Rolled Oats
1/2 Cup Dairy free Milk
1 Cup Self Raising flour
Pinch of salt
1 medium banana - mashed
- Soak the Rolled oats in the Dairy free milk 10 - 20 mins.
- In a jug mix veg oil, mashed banana and caster sugar
- Add this mix into the soaked oats, then fold in the flour. You should end up with a thick batter more like a dough.
Crumble Topping
1/2 Cup Rolled Oats
1/4 Cup Mixed Seeds
1 tbsp Vegan Butter
1 tbsp Sugar
1 tbsp Water
Rub the vegan butter into the rolled oats, then mix in sugar and seeds.
Add a little water and use hands to form your crumble topping.
1. Rub your hands with a little water or veg oil and press the oat base evenly into your baking pan.
2. Spread over the date syrup
3. Take Oat and Seed topping and Crumble over the date syrup. Don't worry about covering the whole top, it's nice having the date syrup peaking out.
4. Place in your oven and bake for 30 mins.
5. Check with a toothpick to make sure center is baked, then sit baking pan on top of a wire cooling rack. Leave to cool before cutting into squares.
