Things to do list - Recipes I need to make My recent blog on cake has left me craving a sweet dessert.  Since It's like going on a treasure hunt trying to find a restaurant that serves both a vegan and gluten free one, I'll just have to make my own.   Vegan coconut Panna cotta  - from Green Evi's blog The photo is gorgeous, even better there are only 3 ingredients in the recipe.  Sometimes the simplest recipes are the best.  She's served it with fresh fruit, which adds a splash of colour.  I can't wait to try this recipe myself. Polenta - Gluten free & Dairy free

    Had a polenta topped Bean stew for lunch today.  One of my work colleagues asked me what it was.  When I told them they asked what language I was speaking.........     Apparently not everyone knows what Polenta is?      Needless to say they were not impressed with my lunch, because it did not contain any meat.  There loss really as while they ate ham rolls, I tucked into a delicious Gluten free and dairy free Pie.  Perfect for the current Scottish Weather.    I'm a fan of Merchant Gourmet quick polenta.  It's one of my go too store cupboard foods. Its really versatile, I use it too make a quick polenta porridge for breakfast.  Too top pies in place of mashed potatoes for lunch and it can even be used to make desserts.    It can be set and cut into rectangles, then later baked as chips.  Or served smooth and creamy just like the best mashed potatoes.  It's glut...

10 EASY WAYS TO MAKE QUICK MEALS When I talk about cooking with friends and family one familiar phrase I always hear is  "I don't have the time" Some Ready  meals take the same time to cook in the microwave, as I can make from scratch.  So no matter how much or little time I have, I am never far from a cooked meal.     The best thing I ever did was not to replace my microwave when it broke.   It does not take that much longer to cook or re-heat food on the stove. New years day - Fish Pie

Dairy free Fish pie There's a local Scottish tradition to have Steak Pie on New years day.   I didn't learn about till we move to down to Fife, so it might just be a Central Scotland Tradition along with supper.  Supper -  a fourth meal eaten late in the evening. In Aberdeen shire we just have a cup of tea or cocoa and a biscuit before going to bed.  So I got kind of confused at a sleep over at a friends, when they started cooking sausages?     Then again each region in Scotland has their own traditions, customs and food specialities.  Back to the steak pie, I'm trying to create new traditions for myself this year.   I'm trying to put back some of the old joy I used to feel during the festive season.  Only this year because of my IBS, Steak is off the menu along with every other kind of meat and poultry. If I couldn't have Steak pie, why not Fish pie.  It's still a pie....... ...

 Dairy free Fish pie Iv been working through my favourite foods to find dairy free versions that I can make for myself.  Fish pie has got to be one of my ultimate winter comfort foods.  I became slightly addicted to it when I had to eat soft food, because of my dental brace.  There was a point when I had to go to the Dental hospital every 2 weeks to get them tightened.  So I ate.... a lot of soft food. If you've never had a dental brace, there is no way you want to bite into any food when you teeth ache.  The standing joke at the time was the amount of mental dental tools my orthodontist tried to fit in my mouth at the same time.
