What do you eat? - When your lactose intolerant

As soon as people find out I'm lactose intolerant, the first question they always ask is....


"What do you eat?!!!!"

It's as though having a food intolerance is as bad as having a serious medical problem like celiac disease or diabetes. 

A food allergy can be life threatening. However a food intolerance has the potential to cause a lot of pain and discomfort. Along with some embarrassing side effects, like diarrhea or excessive flatulence.  Sound like something out of a comedy film, that is until your the one that has it!!!

I might have a limited diet, however in no way is it boring.

To manage my IBS I eat little and often.  I'm lactose and yeast intolerant, I also avoid fatty/fried food, meat, poultry, and watch how much sugary food I eat. 

IBS is different for everybody, if your worried consult your doctor. I worked out which foods to avoid by following an exclusion diet. 


The best way to live dairy free, is too make as much as you can from scratch.  Cutting down on processed food, which can have hidden dairy product. You'll eat better and spend less money in the long run.  It's simple to do.


 I'm dedicated this years project to - What do I eat?




Breakfast

Porridge made with water and a pinch of salt.  Topped with Alpro Plain Soya Yogurt and a sliced banana. 

- 2/3 cups of porridge oats + 2 cups cold water, cooked on the stove stirring occasionally till it reaches the right texture for me)


Morning snack

Sweet clementine
Rice cakes with raspberry jam.

(I weirdly love rice cakes with jam)


Lunch












Carrot and Red Lentil soup, with  oatcakes.
A pear and Blueberry muffin.

Afternoon snack

Fruit scone with dairy free butter.

Dinner

Pasta with Vegan lentil Bolognese.


Carrot and Lentil Soup


Soup is one of the easiest foods to make dairy free, since very rarely is any dairy added.  The only thing I need to watch for is yeast that is sometimes found in vegetable stock cubes.  


- 1/2 Large leek or 1 small leek - chopped

- 3 - 4 large carrots - chopped (or enough too 3/4 fill your pot

- 1/2 Cup - 3/4 Cup Red Lentils

- 1 Vegetable stock cube

- Salt and pepper too taste


Pour a little water or vegetable oil into your pan over a low heat.  Add chopped leek and stir occasionally till they soften.


Add chopped carrots too pan and continue to stir for another 5 min's.  Crumble in the stock cube and stir for another 5 min's over the low heat.  Then add lentils and enough boiled water to cover the vegetables in the pan.  Cover and leave too simmer for 20-25 min's.


Once cooked blitzed with a hand blender.
