10 Ways to Cook Tomato's - Dairy free

Image
Well Kind of......... Okay this is kind of a list of the great variety of ways that you can enjoy the humble tomato, no matter what season it is.   One of my favourite reasons for going abroad on holiday is the food.  I love vegetables that don't Conform to the EU regulations on size and shape.  Organic Veg is just vegetables grown the old fashion way before rules, regulations and pesticide sprays removed all the taste.  Don't believe me, just taste a tomato and you'll know what I mean.   1. Au Naturale The simplest way to enjoy the tomato is Au naturale, as nature intended.  During the summer I dice cherry tomato's in half. Then toss them through pasta with a little oil, salt and pepper for a lovely light supper dish. You don't need to cook them to turn them into a great meal or side dish.   -  Guardian newspaper Internet site       Article on how to make the perfect Salsa.  -  Gazpacho...

Frankly Red hot soup

Found Frank's Red hot sauce for sale in our local Morrison's, I didn't realise you get it in the UK.  I'm a big Diners, drive-ins and Dives fan, and it's been mentioned in a few episodes so I was excited to give it a try. I love adding a kick to my food, so it's the perfect store cupboard ingredients for me.   That was until tonight, I decided to use up some left over spiced rice by adding it to my home made tomato soup.  Tasted the soup and it was just missing something, so got out the hot sauce planning to add a few drops ....... Only I unscrewed the top and ended up emptying half the bottle in before  I realised what I'd done oops.   Iv added an extra tin of chopped tomato's to the soup to rescue it, but it's still got a really big kick, lol. On the positive side my sinus have been playing up lately and this is one way of clearing them xxx

Recipe testing - Lentil Stew

Indian food is well know for it's great vegetarian food.  I started to wonder if other cultures had a similar history, so did a little Internet surfing yesterday.  I found a great site called  International Vegetarian Union , which has a large database of recipes. Over the past 6 months of eating meat free, iv re-discovered recipes i used to enjoy.  Iv also gone through a phase of making veggie food replacement's to meat, like bean burgers.   Iv found great food doesn't need to have meat as a protein.  I can still eat fish and eggs, but I only have these occasionally.  There's a tendency when you have IBS to eat one type of food regularly because you know it's safe.  What can happen is you end up building up an intolerance to it instead.  I excluded milk products form my diet for 6 months, after I was diagnosed with IBS.  I was able to eat it occasionally in small amounts with out setting off my symptoms for ...

Tortes, cupcakes and savoury tarts

Image
Tomato and Pesto Tart Was back at the Pantry today, was glad to get back to my normal routine.  Todays dessert was Peach Torte, basically a fancy name for a cake.  Except it uses a lot more sugar, which is probably why it was so popular. At least they got one of there 5 a day....  Got home and had to bake a batch of ice cream cone cupcakes. My nieces birthday is tomorrow.  It's also the day my brother is un-wiring my cooker, as my new one arrives sometime Friday.  I really don't think things through when I plan!!!!  (Doesn't matter when they deliver my new cooker, I still need my brother to wire up the new one.) So after Tortes, Cupcakes came my dinner of Tomato Tart.  Was in Sainsbury's yesterday for a few Free From Supplies. I found there now stocking  Meridian Pesto Wheat Gluten & dairy free, which is reasonably priced at £1.75.  Iv only seen it before at Real foods in Edinbur...
