Quick Winter Warmer - Carrot and lentil soup

Image
Winter Warmers With the weather getting colder I start to crave comfort food.  Homemade soup has always been one of my favourite things to eat. My mum made the best, it was one of the first things she taught me to cook.   Shop bought soup never tastes as good as homemade, no matter what brand you buy.  Making your own soup is easy and more cost effective.  It's also a lot healthier as you know exactly what is in it. I used to buy my carrots loose and chop but now I have shaky hands, it's safer to buy them pre-chopped.  Most supermarkets have fresh diced carrots and swede.  You could also use a bag of there casserole vegetables as well.   This is the simplest soup you will ever make, it's one of my favourite to eat x  Morrison's Diced Carrot and Swede - 60p   - Whole bag Vegan Bouillon Powder - £2.00 - 3 - 4 tsp's Red Split Lentils - £1.15 - 1/3 Cup or a handful - Add all the ingredients above into a...

Porridge 101

Image
theartfulgourmet.com You don't need to be Scottish to love porridge.  Different nations around the globe all have their own versions, some made with other grains like rice.  It's the perfect breakfast for cold winters mornings.  As us Brits say "It sticks to your bones" There is one thing that really puzzles me though.  I find it hard to understand why people spend money on more expensive porridge just because it's in individual sachets.  The larger bags are more value for money, and just as easy to make.   Why buy golden syrup flavoured porridge sachets, when all you need to do is top your porridge with the real thing. One Portion Porridge recipe 2:1 ratio 1/2 Cup Porridge Oats 1 Cup liquid  (milk, dairy free milk, water) Add oats and liquid to a small pan and turn the hob onto a low heat.  Occasionally stir, till the porridge starts to bubble.  Then stir more frequently.  Once it reaches your prefe...

Why buy soup, when you can make your own?

Sunny roast carrot soup The sun might be shining but its freezing cold outside.  On days like these I always crave a warm bowl of soup to heat myself up.  Today's soup of the day was creamy roast carrot,  proving you don't need to add dairy to create a smooth creamy texture.  I never plan what I'm going to cook when I go shopping,  I like to check out what veg looks the best.  Morrison's had a great deal on pre-packed carrots this week, only 50p for 1 kg.  After my success last week of adding roasted mixed veg to my tomato soup, I decided to do the same with the carrots. Roasting root vegetables just intensifies the flavour, making the finished soup even tastier.   I left the skin on the carrots and chopped them into roughly even sized pieces.  Then Tossed them in a little oil with salt and pepper, before roasting in the oven for 30 Min's. I tipped them into a cooking pot and added enough vegetable stock to cover the...

The Banana mission....

Image
Iv decided to make it my mission to post at least one banana recipe a week.  I'm calling it "Thank banana's it's Friday"  Why Banana's?   They do a lot more than just taste good.  1. There a tasty self packaged portable snack. 2 . You can use a mashed banana as an egg substitute 3. There natural sweetness allows me to reduce the amount of sugar I need in a recipe 4. There high in fibre so there perfect for my IBS 5 . Great for giving an energy boost, that lasts longer than caffeine 6.  A great source of  potassium, bananas may also help to promote bone health.  Potassium is also great for your blood pressure. 7. High in other vitamins and minerals 8. . The peel can be used to fertilise your garden, especially good for roses. 9.  Great for Mental Health as it contains a compound called tryptophan , which when converted to serotonin can improve your mood.  10. Vegetable chips or French Fries......

Image
Sweet Potato Chips I'm from the UK, so too me Chips and French fries are the same things.  Only difference is that French fries are thin cut, while chips are thicker.  Either way they both taste great.  There also one of my biggest temptations. I love traditional fish and chips but they give me horrible heart burn. The oil is also not too great for my IBS.  Rather than cut them out of my diet totally, I switched to baking chips at home.   Which was okay for a while, but some of them are still half cooked in oil before there packaged.  So I started to make my own. There cheaper, simple to make and take very little cooking expertise. They also don't need to just be make from Potatoe's, any root vegetable will do.  Potatoe, sweet potatoe, parsnip, carrots, turnip Buying pre-made fresh or frozen food is almost a habit now,  I know it was for me.     You also buy into the adverts messages,...
