Thank Bananas It's NOT Friday

Friday was a pretty mixed day for me.  The highs were taking my brothers springer spaniel 7 month pup for a walk, then visiting my nieces and nephews after work.   The Lows were finding out the night before my dad's cancer has spread and he will need chemotherapy.  Which was probably why I got distracted at work and accidentally locked myself in the walk in freezer. So decided Friday that I really wasn't in the right frame of mind to blog.   First Recipe: Banana Cookie dough Pie I love cooking watching cooking programs, I have all the food channels on favourites.....  I might not be able to eat every recipe, but they do give me great ideas for making my own.   I was watching an episode of Unique Sweets, were one baker made a pocket pie filled with cookie dough.  In my personal view a totally genius idea.  Only way it could be better was to add some banana.   Make your own or buy Dairy free shortcrust pastry ...

It's that time of week again....... Thank Bananas it's Friday.   No matter what life throws at me, I always have time for my Banana Project.  Everyone needs a hobby, making as many dairy free recipes using Banana's just happens to be mine. First recipe: Banana Glazed Chocolate Donuts I took my inspiration from this recipe I found on  Food.com . I've made plenty of banana cakes, cupcakes and muffins before, never tried to use them as a glaze before.   My glaze wasn't a total success. The problem was I tried to scale down the original recipe and didn't use enough icing sugar. Not using enough icing sugar also made my glaze too  wet, so by the next day the donuts turned a bit too soft. Next time I'll stick to the original.   It tasted great though, the banana glaze was a perfect match for the baked chocolate donuts. To make dairy free, use a vegan butter in the recipe. Thank Banana's it's Friday It's good Friday and it's snowing....  So Iv needed my favourite Tropical fruit more than ever this week.  In cold weather all I crave is filling comfort food.  So I couldn't resist this recipe for Butterscotch Self Saucing Pudding  on all recipes.co.uk, and the only way to make it better was too add Banana's. Confession time :  Iv developed a non standard eating routine due to my IBS (Irritable Bowel Syndrome) My stomach just can't handle 2 or 3 course meals.  So I sometimes have a main meal at lunch time, so I can eat a dessert for my evening meal.  If not dessert I have breakfast cereal instead.  After the jaw surgery I didn't have much appetite. Well I was drinking my meals threw a straw for 2 weeks,  then progressed onto navigating soft food through the bands locking my upper and lower jaw together.  Kind of took the joy out of eating.  The best advise I ...

Raisin squares

 Raisin squares  Another day and another baking experiment.  This time I used my raisin squares as a base recipe and added a mashed banana instead of the golden syrup.  The idea was the banana would  add both sweetness and moisture to the squares. To be honest  I think they taste even better this way, but then I am a banana junkie.  There's probably only a few recipes that I haven't added banana too.  They work as a replacement for eggs in most cake and cookie recipes.  With in reason that is, it's not a good idea to use them as a substitute in recipes that need more than 2 eggs.  The extra sweetness they bring, also allows you to reduce the amount of sugar.  Next time I make these I'm going to try adding a grated carrot to make a carrot cake version.  Who wouldn't love a cake or cookie that helps count towards your 5 a day  xx
