Rice Dessert Recipes - From around the world





Rice pudding is one of my all time favourite comfort foods.  My mum used to make baked rice pudding for us, when we were kids.  We would fight over who would get the skin that was on top.  Rice pudding is an easy recipe to make dairy free, gluten free and vegan.  The recipes I've found could easily be served at a dinner party. Not just for a family meal.  

 It has always fascinated me,  how many global variations of the same basic recipe there are.  Did it happen because of global travel and migration.  Or did a lot of cooks just have the same idea.

Using tinned coconut milk makes this recipe extra creamy.  I love to top mine with fruit compote.  Rice pudding is one of those dishes that can be served hot or cold.

Pakistani Royal Dessert made with Sweet Yellow Rice and loads of nuts, raisins, murabbas and khoya.  I love finding traditional recipes.  This one just jumped out at me, I can't wait too give it a try.  She has useful advice for making the recipe dairy free.

Substitute with a can of coconut milk, which will go great with the dessicated coconut.  The spices sound gorgeous. If you can't afford saffron add a little turmeric instead.  It will give the same golden colour and blend will with other spices.

 An American inspired rice pudding recipe.  It's practically health food since it counts towards your 5 a day.  I can imagine serving this will my favourite Coconut yogurt on top and sprinkled with chopped nuts.  

 Peanut butter rice pudding from Chocolate covered Kate

 Chocolate covered Kate is on of my favourite food blogs. I would never have thought of adding peanut butter.  This would be great with mashed banana or some strawberry jam on top.  

 Thai Kao-Niew-Moon from vegan baking.net 

 A traditional Thai version of rice pudding, usually served with fresh sliced Mango on top.  

Greek Rice Pudding - Rizogalo from lemon and olives

 Made with Arborio rice and cooked using the same technique as risotto.  This one would be a labour of love to make.  I'm not sure I would have the patience.
Portuguese Rice Pudding  from  family feast

 Mediterranean countries seem to have similar recipes for rice pudding, which is understandable.  This one is slightly different and is thickened with egg yolks so is not vegan. 

  (Though a have seen a few recipe cheats that use vanilla pudding mix to make them extra creamy.  In the UK Birds custard powder would do the same thing) 

 Tuergoule - Normandy Rice pudding from Normandy food

 This recipe has a fascinating history, as it was baked in bread ovens after the days bread was done.  It's pretty similar to others what makes it different is that it is baked on a really low heat for over 5 hours.  The sugar in the milk on top caramelises.  Traditional served with brioche bread.

 One version of the recipe suggested using a slow cooker instead.  I'd feel a lot safer leaving a slow cooker on all day, than an oven.  What if you forgot you were baking it!!



Rice pudding ice pops from Saveur 

 I would never have thought have making a rice pudding ice pop.  This is a Mexican Paleta recipe.  To make these vegan substitute tinned coconut milk instead of the condensed milk.  

 Banana coconut Packets   from Saveur

 Rice pudding and banana wrapped in a banana leaf, then steam cooked.  We don't have much banana leaves in Scotland, so I would wrap them in foil wrap instead.  The recipe makes 12, so you could easily half the recipe if this is too much for you.  I'm really intrigued by this recipe, I think this one would be great.

 My two favourite foods, coconut and chocolate all in one dessert. The recipe author says this is a samoa recipe.  Ohh wouldn't this be great as well turned into mexican Paleta.  

Making ice pops is a great way of using up left over rice pudding.  That's if there are any left overs xx

Scottish Tablet - Dairy free & Vegan

          Less well know than Haggis, tablet is another traditional Scottish food that's a whole lot sweeter.   Scottish Tablet - wiki    One of our regular customers at work dropped off some home made Tablet for us this week.  As always everyone but me could eat it, so I took a piece home for my mum instead.  It got me thinking that there must be some way to make it dairy free.   Shop bought packaged Scottish tablet is never as good as homemade.  As a child growing up in Scotland, I have fond memories of the sweet.  It was sold at cake and bake sales, and if you were really lucky the little corner shop would have a regular supplier.  It was always wrapped into portions with greaseproof paper, that way you knew it was authentic.        Scottish Tablet recipe     Traditional Scottish tablet is not exactly dairy free.  Usually I can use a free from substitute's, however the only recipe I knew was made with Condensed milk.  So Iv kind of giv

Curdled Rice pudding

What it should have looked like..... Due to a touch of nostalgia I decided to make some rice pudding today.  Also it mean't I'd have a pre-made breakfast for tomorrow morning and 15 mins more in bed.  Cold porridge just doesn't taste as good as cold creamy rice pudding. For me rice pudding has to be baked in the oven as that's the way my mum taught me to make it.  It was also one of the first recipes I was able to make dairy free.    Basic rice pudding constists of 3 simple ingredients  1 1/2 oz Rice 1 pint Milk  1tbsp Sugar Baked at 150 celsius for 1 1/2hrs - 2 hrs Something magical seems to happen to them, when cooked for a few hours in a low oven.  Only not this time because I decided to add some extra ingredients!!! One of which managed to react with the soy milk and curdle it.  Suspects are Mixed raisins, diced almonds or desiccated coconut.  I was able to save it and make it edible by adding some Bird's Custard powder, co
