Banana Chocolate Mini Tarts Now my laptop has been repaired I can finally start blogging about my favourite fruit again.   So why Banana's?     As I get older my IBS gets worse and I find more foods I can no longer eat.  Instead of giving up my favourite treats I decided to research dairy free baking recipes and discovered a wealth of vegan recipes.  I was surprised to learn that mashed banana can be used as an egg substitute.   So I started to wonder, what other goodies can be made with the humble banana.  So started my year long quest.   First Experiment: Iv been looking for a chocolate banana ganache recipe for a while I could not find one.  So I finally decided to come up with my own one, by adapting my basic ganache recipe. Chiquito Lunch Burrito Bowls - Veggie Chilli Had a great meal out on Monday at  Chiquito Restaurant   in Dunfermline with one of my good friends.  Her birthday had been the week before, so I had baked her a belated birthday cake.   Chocolate Birthday cake recipe To make dairy free , use dairy free butter for the cake. For the ganache use dairy free chocolate and depending on your personal taste try using soya cream or coconut milk.   To make Vegan, use a chocolate wacky cake recipe for the base.   I turned to my one of my baking idols Mary Berry for the Recipe, the decorations were all my own though.   I baked a full dairy 2 layer chocolate cake, sandwiched with seedless raspberry jam.  I  frosted it with chocolate ganache, sprinkled the top with Crispy M&M's and put jammy dodger biscuits round the outside. Part 2 - EATING OUT Eating out when you have a food intolerance is a pain in the bleep.  Friends and family no longer ask where do you want to eat?  instead its now Where can you eat?  It's coming up for the festive season so I thought I'd do a little research so I could give them a few more choice's to pick from.  Talk about complicated and confusing.  Your okay if your only lactose intolerant or Gluten intolerant.  However I'm lactose and yeast intolerant, which makes it hard to work out exactly what on a menu I can eat.  No two people with IBS are the same so it seems a bit daft to me that the websites assume you only have one group of foods your intolerant too!!!!
