10 Ways to Cook Radishes - Dairy free

Image
Radishes My dad used to grow these radishes in our garden, we just washed them and ate them as snacks.  They have a wonderfully peppery taste.   Our local supermarket had some on offer, so why not see what else I could do with them? 1. Glazed A classic way of cooking root vegetables is to glaze them.  It's really a simple way of cooking veggies, but it sounds a lot more upmarket than it really is.     -  How to Glaze Root Vegetables -  Balsamic glazed Radishes with ramps -  Honey-soy Glazed Vegetables with Crispy mushrooms 2. Roasted I love roasting vegetables, it makes them crunchy on the outside and soft on the inside.  It also seems to concentrate the flavour and make them sweeter.   It's not quick, but it's less time consuming. Just toss them in oil, salt and pepper and let your oven do all the work. You don't need to keep checking on them, as you would if cooking on the stove top....

10 Ways to cook Mushrooms - Dairy free

Image
Mushrooms Since giving up meat and poultry for my health due to my IBS,  Mushrooms have been a great substitute.  They have a firm texture and a wonderful savoury taste, that makes a hearty, healthy meal.   Lots of recipes pair Mushrooms with dairy products like cream or cheese.  Hopefully I can show you that there just as great dairy free.  1. Soup I remember my First Aid in Work course, the instructor suggested I eat in the restaurant.  He happily suggested the mushroom soup, even though he knew I was lactose intolerant.  More fool me for listening to him, even though he was a trained nurse.  I spent the next day with sever stomach craps!!!! The only time I eat mushroom soup these days is if I make it myself. -  Hungarian Mushroom soup    This recipe uses vegan sour cream, which Iv yet to find in any supermarket.  Plain dairy free yogurt would give the same taste. -  Easy Mushroom s...

RHUBARB We all have our weakness, one of mine is gardening.  I am a totally useless gardener, however I do have one plant successfully growing in my garden - Rhubarb.   Rhubarb is technically a vegetable that's used as a fruit. Where as a tomato is a fruit that's used as a vegetable.. So does it really matter, they both taste great which is the most important thing. I harvested my second batch last weekend, it's a lot quicker than going to the shops. 1. Stewed Rhubarb Stewing rhubarb is probably the most common way of cooking it.  You can cook them in a covered casserole dish in your oven, or in a saucepan on your stove top.   Either way it's simple, just don't forget the sugar.    Rhubarb has a sharp sour taste that needs mellowed In winter stewed rhubarb is one of my go to staples for topping my porridge.  Especially if it's topped with a little dairy free yogurt mmm -  Stewed Rhubarb with porri...

10 Ways to cook Broccoli - Dairy free

The problem with most Broccoli recipes is that they all include dairy in some form or another.  It seems that celebrity Chef's don't think you can make great vegetarian food without cheese or cream.    Ahh it really annoys me.  There are plenty ways to cook great meals with broccoli without adding dairy.    1. Boiled Cut the broccoli into Florette's and add to a boiling pan of water.  Cook for 5 - 6 Min's.  Then drain, leave in a colander over the cooking pan for a few Min's to allow all the broccoli to drain well.   DON'T OVER COOK Tip:   Cook your Broccoli like pasta.  It tastes a lot better al dente. Simple ideas for boiled broccoli Soup :   - Blitz in a food processor with some of the cooking water and return to the pan to re-heat.  Stir in some plain soya yogurt to make a creamy soup. Pesto : - Blitz in a food processor till smooth with a little vegetable oil, lemon juice...
