Waste Not, Want not - Single Vegetables

Image
WASTE NOT,  WANT NOT LONELY HEART VEGETABLE     It's the end of the week and you look in the fridge for something to make a meal.  But all you find is a lonely single carrot or courgette, and your left thinking "What can I make with that!!!"     To reduce food waste I now do smaller shops, more often than one large monthly one.  By only buying what I need for that week I have reduced the amount of food I need to throw out.  The only problem is I usually end up with random single vegetables in my fridge.       Carrots There's a lot you can do with a single carrot, it can go with any global cuisine.  Or more often a Hybrid of more than one, depending on what I have in my store cupboard. Cous Cous Add a grated carrot to cous cous for a quick meal.  I first make my cous cous up with a little veggie stock and add in a pinch of ground cumin.  For a Moroccan feel I like to add some drie...

Porridge 101

Image
theartfulgourmet.com You don't need to be Scottish to love porridge.  Different nations around the globe all have their own versions, some made with other grains like rice.  It's the perfect breakfast for cold winters mornings.  As us Brits say "It sticks to your bones" There is one thing that really puzzles me though.  I find it hard to understand why people spend money on more expensive porridge just because it's in individual sachets.  The larger bags are more value for money, and just as easy to make.   Why buy golden syrup flavoured porridge sachets, when all you need to do is top your porridge with the real thing. One Portion Porridge recipe 2:1 ratio 1/2 Cup Porridge Oats 1 Cup liquid  (milk, dairy free milk, water) Add oats and liquid to a small pan and turn the hob onto a low heat.  Occasionally stir, till the porridge starts to bubble.  Then stir more frequently.  Once it reaches your prefe...

10 Ways to eat Coconut - Dairy free

Image
Discovered my local supermarket were stocking Coconuts in there fruit and veg section.  I couldn't resist and had to buy one.  It wasn't till I got home that I thought about what to do with it, and how do I open it!!!!! Questions I should have really thought about before I bought it.  Lucky for me you can find tons of helpful information on the Internet.   If you plan to buy your own Coconut's, make sure you are prepared with a hammer and nail.  Bent nails that your brother has prised from your kitchen wall are not going to work.   Probably also not really hygienic either.   Take the nail and hammer it into one of the 3 eyes on the base of your coconut.  Once open you can then pour out the coconut water, before using the hammer to break open. 1. Coconut water Coconut water  is the Clear liquid found inside young coconut.  You don't need to crack open coconuts yourself, since it's now available to buy in cartons.   ...

10 Ways to cook Mushrooms - Dairy free

Image
Mushrooms Since giving up meat and poultry for my health due to my IBS,  Mushrooms have been a great substitute.  They have a firm texture and a wonderful savoury taste, that makes a hearty, healthy meal.   Lots of recipes pair Mushrooms with dairy products like cream or cheese.  Hopefully I can show you that there just as great dairy free.  1. Soup I remember my First Aid in Work course, the instructor suggested I eat in the restaurant.  He happily suggested the mushroom soup, even though he knew I was lactose intolerant.  More fool me for listening to him, even though he was a trained nurse.  I spent the next day with sever stomach craps!!!! The only time I eat mushroom soup these days is if I make it myself. -  Hungarian Mushroom soup    This recipe uses vegan sour cream, which Iv yet to find in any supermarket.  Plain dairy free yogurt would give the same taste. -  Easy Mushroom s...
