More to Christmas Mincemeat than pies

Dairy free www.canstockphoto.com The classic way to cook with Mincemeat  is to bake Christmas Mince Pies.  You can't have Christmas in the UK without them.  You either love them or hate them.  Me I love, unfortunately the pre-made ones all contain dairy in the pastry.  The easy solution was to make my own.   However there's more to mincemeat than just pies....... Traditional mincemeat recipe  - Vegetarian and vegan shredded suet is easy to find in most supermarkets.   Pastry www.canstockphoto.com Cheats Mince Pies Mincemeat Palmiers  - Roll out vegan puff pastry and spread with vegetarian mincemeat. -  Roll up the pastry from both ends so they meet in the middle.   - Cut with a sharp knife into 1 cm slices, place on an oiled baking sheet. - Bake for 10 - 15 Min's in a 200 Celsius Oven. More Banana's....

    PLUS       = heaven   I'd rescued a batch of over ripe banana's from a friend before it went in the bin.  I really wanted to find a way to use them.  So I started my day off with some banana and peanut butter porridge, a recipe that I found on the internet.  Lets just say its an acquired taste.  Normally I love anything thats got banana and peanut butter in the recipe title, not this time.  I chopped some banana into my pot with, porridge oats, water, a pinch of salt and a shake of cinnamon. Then I cook them slowly for 20 mins. Tasted great, my mistake was in added the peanut butter on top.  All it did was mask the taste of the banana.  Even tried mixing it in which made it at least made it edible.  Won't be making that one again!!!!
