Thank Bananas It's NOT Friday

Bananas about bananas Okay quick Re-cap - I gave myself the task of making as many recipes as possible using my favourite fruit the Banana.  Ohh and they had to be dairy free, since I am lactose Intolerant. Spiced carrot porridge

I know I have a mental health problem, but I promise you i'm not mad!!!  My IBS is really bad at the moment and all I seem to be craving at night for my Tea is cereal because it's easy to digest. Which led me to wonder, what other ways i could serve you porridge to stop it getting boring.   Imagine a bowl of porridge that tastes just like Carrot cake mmmm.  Surprisingly it works!!!!  Who would thunk it.  I really made it out of pure curiosity but it tastes great.  Single portion Carrot spice porridge 1/2 cup porridge oats 1 cup water for thick porridge, 1 1/2 cups for a creamy porridge 1/2 tsp mixed spice 1 tsp Sugar (sweeten to taste) 1/2 a carrot grated. Handful of raisins A sprinkle of sliced almonds Add every thing except the almonds to your porridge pot, or jug if you cook in the microwave. Chestnuts My baking and cooking experiments have taken a nutty turn lately. So far Iv made a Mushroom and chestnut pie for Christmas dinner, used them in a Meatless loaf recipe, added chopped mixed nuts to my banana loaf and attempted to make Almond cream cheese.  Like all of my experiments, they never quite turn how I expected....... Yesterdays experiment involved the chestnuts I had left over from Christmas dinner. I bought them  Frozen and already peeled, which made the cooking a lot easier.  Chestnut and apple muffins I started by cooking them for 15 minutes, blended them till smooth then added Agave Nectar to make them into a sweet chestnut puree.  (You can cheat and buy sweet chestnut puree pre-made in a can)  I then replaced the banana for the puree in one of my muffin recipe.  Again tastes pretty good but I know they can taste better.  Chestnut is a delicate flavour so I didn't add ...
