Rhubarb Rice pudding - dairy free

RHUBARB RICE PUDDING WITH COCONUT YOGURT  AND GRANOLA This recipe came about by accident.  I'd been stewing some of my own homegrown rhubarb, to make a fruit compote only to find it released a lot of water.  I had soaked the rhubarb first to clean it, which led to the problem. Watery fruit compote isn't brilliant, so I strained it through a sieve instead.  I was then left with at least 300 ml of rhubarb juice.  I just thought What if?  The jar of rice was right in front of me, so I decided to give it a try. I followed a normal baked rice pudding recipe, but substituted the milk for the rhubarb liquid instead. I didn't have pudding rice, so I used normal white rice.  I think it works just as well.  I set the oven on low and left it to cook.   Baked Rice Pudding 1 1/2 oz/ 50 g of Rice  2 tbsp of sugar 1 pint of milk Place all the ingredients in a casserole dish, and bake in a low oven 150 c or  30...

RHUBARB We all have our weakness, one of mine is gardening.  I am a totally useless gardener, however I do have one plant successfully growing in my garden - Rhubarb.   Rhubarb is technically a vegetable that's used as a fruit. Where as a tomato is a fruit that's used as a vegetable.. So does it really matter, they both taste great which is the most important thing. I harvested my second batch last weekend, it's a lot quicker than going to the shops. 1. Stewed Rhubarb Stewing rhubarb is probably the most common way of cooking it.  You can cook them in a covered casserole dish in your oven, or in a saucepan on your stove top.   Either way it's simple, just don't forget the sugar.    Rhubarb has a sharp sour taste that needs mellowed In winter stewed rhubarb is one of my go to staples for topping my porridge.  Especially if it's topped with a little dairy free yogurt mmm -  Stewed Rhubarb with porri...

Banana and Rhubarb Cake Whenever I have a meal at home I tend to be watching a cooking program.  Call it my own little quirk,on  this particular occasion I was watching   Cup cake Wars Funny or Die Episode.  Love the show, some of the weird combinations the contestant's try are often hilarious. And some times I get idea's for my own baking projects.  De ja vu time , I'm watching the show planning my own baking for the next day trying to decide what to bake.  I had banana's that needed used and I'd also picked my first crop of Rhubarb from my new plant. (Didn't find out till later that you shouldn't pick Rhubarb the first year.  Oops) So just as I was thinking to myself if Banana and Rhubarb would go together, one of the contestants uses the exact same combination for the taste test.  A sign or what!!! Especially since Florian loved the cupcake.  If it's good enough for Florian it's good enough for me.......
