10 dairy free ways to cook 
with Nuts & Seeds

It's at this time of year that us Scots get a little bit more nutty.Perhaps it's a Cultural phenomenon but we do seem to eat a lot more nuts.   Bags of shelled peanuts appears beside Sweets, Candy and toffee apples for Halloween.

Then at Christmas the bags of mixed nuts come out to nibble along side the seasonal drinks. Boxes of chocolate's are bought as gifts for friends and family, which always contains 
a few nutty ones.  

While  nuts and seeds are Delicious Au natural, there is a lot
more that you can do with them. 
 They are full of protein, minerals and vitamins
making them a great ingredient to add to a dairy free diet.  



1. Condiments


- Mustard Seeds

I have recently just discovered mustard seeds, there now one of my favourite cooking ingredients.





2. Fried


Bombay potatoes is one of my favourite Indian meals. Especially in the winter months, it's one of my favourite comfort foods.  






3. Sweet Bakes



Fruit Loaf Cake


Use my   Top 5 basic cakes and bakes to make some sweet baked recipes.

 Soda Bread scones

-:Walnut  & date Soda Bread scones

- Add 1 tbsp Sugar, 1/3 Cup Walnuts chopped, 1/3 Cup Dates Chopped

Fold into dry ingredients and follow the rest of the recipes

 Cookies

-:Lemon Poppy Seed Shortbread Cookies

- Add Zest from 1 lemon & 1 oz Poppy seeds.  

-:Oatmeal nut & seed cookie

Swap 2 oz Flour for rolled oats & add 2 oz mixed nuts & seeds. 


 Cakes

-: Orange poppy seed cupcakes 

- Add Zest of 1 Orange and 2 oz Poppy seeds


Muffins

Breakfast Muffin

-: Instead of fresh berries, add 2 oz mixed dried fruit & nuts

-: Fold  2 oz Chopped walnuts into the cake batter

Peanut Butter Granola Bars

In summer I love to eat Muesli for breakfast, especially if it's filled with dried fruit, nuts and seeds.  In winter I switch to Porridge, however eating the same porridge every day can be boring.  One way I pimp it up is too top my lovely smooth porridge with crunchy nuts and seeds.

Seeded Corn Bread  - Use this Recipe from www.ppk.com  and Sprinkle mixed seeds onto the batter before baking.  

Pesto & Olive Soda Bread  Use the Vegan Basil nut recipe above and substitute soya milk,  to make this dairy free.

Savoury palmier - Use Shop bought puff pastry. All  Jus-Rol pastry is suitable for vegans except the All butter & Sweet Shortcrust.  



7. Dairy substitutes

I have recently been converted to Almond milk.  Nuts can be used to make other Dairy free Substitutes.


Simple Homemade Almond milk

Almond 'Feta cheese spread' 


Tofu 'Cottage Cheese'   No nuts or seeds in this one, however sprinkling mixed seeds on top would turn this into a great dip.

Vegan ' Cream Cheese'

8. Drinks






An easy way to add a nutty taste to your smoothies, hot chocolate or lattes is to use Almond or Hazelnut  milk.  Or stir in a spoon of your favourite nut butter.  

Nut n Honey Smoothie  - Use Almond milk to make this totally dairy free

Skinny green monster smoothie - One for Halloween... Since I have yet to find a dairy free Greek yogurt, add a substitute instead.  Or extra banana or 1/2 cup coconut cream would work as well.  

Peanut Butter Hot Chocolate  Use Almond or Hazelnut milk to make this one extra nutty.  Then top off with some Cashew cream to make it extra decadent. 



9. International 

Being on a restricted vegetable based diet does not mean food has to be boring.  People are often surprised by the variety of meals I eat.  Looking at international recipes means I never eat the same meal more than once a week.....
